I don't know how to make it reappear and help appreciated.

    Ingame, go Option (O button) > UI Settings > Reset UI Position.

    That resets the UI position and where the HP / MP bar is usually it's not there.

    Have you used any mods, by any chance? That could be a reason why they're not showing up in game. If so, all you have to do is remove the mod.
